iChat has a setting as to whether or not you wish it to remember your custom "away" messages. You reach this setting by clicking on the "Available" message below your name at the top of the Buddy List window, and then selecting "Edit status menu..." from the pop-up menu. In the dialog that opens, checking "Remember custom messages" will make iChat remember everything you type in as an "away" (or "here") message.
However, it's somewhat of a pain to have to go into this panel every time I want to add a new permanent message (I leave the preference set to "forget"). However, it seems that pressing shift-return instead of just return (in the box where you enter your message) will make iChat remember individual messages when the preference is set to forget (and vice versa).
