Customize the keyboard layout flag icon

I have looked through the site and while I have seen some hints on keyboard mappings etc. I have not quite found something like what I wanted to do for a long time... change the flag icon on the keyboard menu in the menubar...

Who chooses which little countries and flags go in OS X's International panel? For years, I used to look at the Union Jack waving over my desktop and wishing I could change it to the South African flag... well ever since 1994, anyway.

But while Apple added in new countries into each new iteration of the OS, South Africa remained absent. Even in Panther, there are Keyboard icon and localisations for some pretty obscure countries, tribes even, but no South Africa. So, there was nothing to it but to try and work out how to change it on my own. After a bit of R&D and Google, I discovered that OS X can store custom keyboard layouts on a per user basis, in the /User -> Library -> Keyboard Layouts folder.
