After a bit of experimenting, it turns out that the PDF files MUST have the Type and Creator codes set perfectly. Most PDF files downloaded from the web, and any PDF file created by OS X, use a different creator code than what acroDesktop converter requires. To make acroDesktop "see" the PDF file you are trying to convert, set the Type to PDF and Creator to CARO. Now the PDF file can be dragged to the acroDesktop window. I used BareBones Super Get Info utility to add the codes, although there are other utilities that can get the job done.
Note: using the "Open With..." will not fix this, so you'll need a utility that can set the Type and Creator codes.
[robg adds: When you run the installer, it searches all of your hard drives for any installed Acrobat Reader program. Then it again searches all of your hard drives for every installed Palm Desktop installation. In addition to being highly annoying, this can take quite a while if you have a lot of drives, so be patient -- the two searches took at least five full minutes on my machine, followed by a 10-second install!
Also, if you have the developer tools installed, you can use the Terminal to set the type and creator codes by typing SetFile -t PDF -c CARO some_file.pdf.]
