Use SSH to secure AppleShare connections Network
When you connect to an AppleShare server via Command-K, click the "Options" button on the User - Password dialog box. Along with the Save to Keychain option is the option to use SSH to secure the connection to the server. Sweet!

Do any changes need to be made to the server, or is this something OS X.2 Server includes?

Yes, this all assumes you've already got SSH up and running, and you've already set up authorized_keys. There are some good hints on SSH setup elsewhere on the site.
