I have a USB-Parallel adaptor and have found that I can connect my Lexmark E310 to the Mac using the adaptor. The printer is automatically recognised and installed.
Although I haven't tried, this suggests that it may be possible to print to many non-USB printers through an adaptor as though they are USB printers. It might also work for serial printers. This does, of course, require the correct drivers for any printer - but that's another story!
