Define new speech recognition shortcuts

I decided to start using speech recognition and found a really cool command called "Define A New Keyboard Command". You say that with speech on, and a window pops up asking for the keystroke desired, and after you enter that, it asks what you want to call it and if that command is valid for ALL applications, or just the current one.

For example, I have it set so that I say "Back" in IE, and it hits command - [ (the shortcut for the back button). Works great! I set numerous others such as down, up, tab, etc for universal apps, and other for iTunes like "Play" which is the return key, and stop and pause (the spacebar). Now to figure out how to control iTunes without it being the current running app.
