Wheel scrolling through menus System
In applications that support scroll wheels (all Cocoa apps, some Carbon apps), when you pull down a menu, you can use your mouse's scroll wheel (if you have one) to scroll through the menu's choices. Also, for the duration you're in the menu, your scroll wheel will act like a button when you press down on it.

[Editor's note: Cool trick! I found that the button behavior was flakey (it's ignored in Mozilla, for example), but the scroll wheel worked everywhere I tried it in supported apps!]

What I've noticed is that if you move the mouse at all while using the scroll wheel to go through menus then it becomes erratic, so keep your hand steady as you scroll.

Yeah, I was hoping that, in a menu, if you pressed in the wheel and scrolled down (page down in Cocoa apps), you'd actually be able to page through the menu. Unfortunately, this wasn't the case. It's also how I discovered the scroll wheel acting as a third button.
By the way, I hear MS is due to release OS X drivers for their Intellimouse line in February.
