Recreate the Control Panels folder System
If you really miss the old "Control Panels" folder, you can (more or less) recreate it using the dock. Simply navigate in the GUI to the /System/Library folder, and then drag the "Preferences" folder onto the right end of the dock.

Control click on the folder, and you get direct access to each the system prefs! Thanks to the X4U mailing list for this one...

This is related to your post somewhat... for those people who bought multiple button mice. I have a kensington turboball. Although the kensington software isn't ported to OS X yet, I noticed that my second button does work as a control-click! Good work by Apple on this one! Therefore, if you have a 2-button mouse, you can just right-click to get this pop-up menu.

I've also noticed that the scroll wheel on my Logitech mouse works EXCEPT in the Finder. Which I find very strange! But all other apps seem to work fine! No drivers needed!
